Description

This incredible coloured jewel of a shell wrapped around the Taonga of our beautiful country. The Paua meat is a highly sort after delicacy around the world being served up in may different ways but still to this day we enjoy the simple style of thin strips with a dollop of butter, some crushed garlic, all in a hot pan for a couple of minutes and enjoy hot or cold.  Scientific name, Haliotis iris, can grow upto 20cm in some waters around New Zealand due to water temperature and nutrient rich tides.
